Tatiana’s Vegan Pro-Omega Muffins

  • 2/3 Cups of Almond Breeze unsweetened vanilla almond milk

  • 3/4 cup of  Protein Powder I used Vega  (Vanilla), Nutribiotic Vanilla, or Biochem’s 100%Vegan Protein
  • 1tsp of vanilla extract
  • 1tsp of baking powder
  • 6  packets of Stevia
  • 1tsp of cinnamon
  • 1 cup of quinoa (whole grain flour)

  • 1/2 Cup of Qi’a Chia, Buckwheat and Hemp Cereal

  • 3egg replacer servings

  • optional( add tsp of agave nectar and 1/2 tsp of salt) I did not. It will give extra taste, but also extra calories and sodium.
  • Mix together the dry ingredients in one bowl
  • In a separate bowl, mix together the wet ingredients. When those are each mixed together separately, combine dry and wet ingredients together. I over mixed it in a blender, but no need to do that, just mix until they are well combined, about 20 stirs. Scoop the  batter into a olive oil sprayed muffin pan. Bake at 350F degrees for 20 minutes
