It’s late. You’re hungry, and you forgot to go grocery shopping. You could order in, but you’d prefer to save both your wallet and your waistline by eating something at home, but what? After all, chip crumbs and a couple pieces of fruit hardly count as a meal. Being a full-time college student, I know this scenario all too well. However, I have devised a few fool-proof backup plans to save me from finding my way to the nearest McDonald’s when I need food now. All it takes is a few staple ingredients, some creativity, and you can make a delicious healthy meal out of just about anything!
First, find the can of broth that has been sitting in your cupboard for months. Beef, chicken, or vegetable, the variety does not matter as long as it suits your taste buds.
Then, scrounge together whatever vegetable and protein sources you have lying around. Scour your freezer and the bottom of your fridge, you’re bound to have something available.
Now, throw it all in a bowl, pop it in the microwave (or warm it on the stove), and you’ve got yourself a homemade soup!
Don’t hesitate to experiment with seasonings if you want more flavor than that of the broth, and don’t overthink your diet!
Eating healthy doesn’t have to be difficult, time consuming, or expensive. Learn to keep a few staple items in your cupboards for emergency situations, and you’ll be able to stick to your goals with ease!
