Turkey, Sweet Potato, and Kale Soup

Tatiana’s Turkey Sweet Potato and Kale Soup

1 Large Onion chopped small

1 Bell Pepper chopped small

1 Poblano Pepper chopped small

1 Garlic Clove chopped small

1 12 ounce package of 97/3 or 97/1 lean ground turkey

1 large sweet potato diced

1 package of washed already prepared and cut kale( I used Organic Kale)

1  48 oz container of low sodium chicken broth ( I use central market organics free range chicken broth)

Salt ( to taste)

Pepper ( to taste)

2 tsp oregano

2 tsp of thyme

2 tsp of rosemary

2 tsp of olive oil


Brown ground turkey in a skillet  and set to the side. Heat olive oil in a large pot over medium heat. Add onions, poblano peppers, bell peppers, and diced garlic to pot and cook until onions are clear. Add sweet potatoes and cook for about 3 more minutes.

Add chicken broth, salt, pepper, oregano, thyme, and rosemary and bring to a simmer. Allow to cook for about 10 minutes until sweet potatoes are soft.

Add ground turkey and 2 cups of chopped kale  and let soup simmer over low heat for 20-30 minutes, serve hot.

I love this soup, especially for cold weather.
